Caramel Nut’s Tarts 🤎

These tarts are great for sharing with your family and friends.


Ingredients

Shortcrust Shell 🥧
• 30g Icing Sugar 
• 80g Unsalted Butter
• 25g Egg 
• 60g Almond Flour 
• 100g All-purpose Flour 
• 2g Salt 


Ingredients

Nuts Filling 🌰🥜
• 38g Heavy Whipping Cream
• 30g Signature Market Rainforest Raw Honey
• 32g Granulated Sugar
• 5g Water 
• 4g Unsalted Butter 
• 1g Salt 
• 100g Signature Market Low Carb Mix
• 20g Signature Market Natural California Black Raisins
• 5g White Sesame


Steps

Shortcrust Shell
• Add soften butter at room temperature to icing sugar and mix well. Combine the beaten egg into the butter little by little.
• Add in the almond flour and sift in the all-purpose flour and salt into the mixture. Combine them well.
• Transfer the pastry dough to a parchment paper, then fold the paper in half to wrap the dough in between.
• Flatten the dough into a 0.25-inch tall with a roller. Refrigerate the dough for at least 30 minutes to relax the gluten.
• Preheat the oven to 150 degrees
• Remove the dough from the refrigerator, and cut it into a round shape to fit your tart mould. Place the dough on the tart mould, and push it down to fit in. 
• Poke small holes in the pastry dough with a fork. 
• Bake the pastry crust for 15 minutes.

Filling
• Heat the heavy whipping cream and honey in a saucepan with a medium flame. Cook them until well combined.
• In another saucepan, heat the sugar and water until it turns golden from the edges with a medium-high flame. (Don't mix it while cooking.) Warm it through until the sugar has dissolved in the water.
• Combine two mixtures into one, and bring it to simmer. Keep stirring until caramel color forms. Add butter and salt into the mixture, stir to combine.
• Pour the nuts and raisins into the caramel sauce and mix evenly.
• Place the filling on each tart crust and toss some white sesame over them. 
• Bake for another 5 minutes at 150 degrees to set.
• Enjoy when they are cool down.
