A rendition of the Chinese classic roasted chicken, the dish features a golden roasted whole village chicken, which perfectly combines the bold flavours of Sichuan cuisine and Chinese five spice to tantalise your taste buds.


Stewed Dried Oyster with Sea Cucumber and Black Moss
One of the must-haves for the season, every ingredient for this dish is symbolic. In it, there are dried oysters (ho see in Cantonese) which means good things to come. Eaten with black moss, the combination of the ingredients is regarded as ho see fat choy, which means good business, a favourite for business owners as it symbolises a successful, prosperous business for the coming year.


Poached White Pomfret with Shredded Chicken and Mushrooms in Spicy Supreme Stock
Fish is commonly served as it symbolises "surpluses for the new year" and abundance. A signature dish, it perfectly combines prized ingredients from both land and sea. This alluring one-plate dish features steamed White Pomfret, slow-cooked for eight hours in superior chicken stock, which enhance the natural sweetness and taste of the selected White Pomfret.


Wok-fried Prawns with Angled Luffa Gourd, Shimeji Mushrooms and Cashew Nuts
A huge staple in Chinese New Year meals, its pronunciation in Cantonese (har) echoes the sound of ringing laughter, which is often associated with happiness and joy. The dish features a whole plump wild sea white prawn, symbolising the completeness of life.
